Setup Raid 1 on a running Ubuntu server

Project Description:
I have a home server that is running Ubuntu [url removed, login to view] LTS. The system is on one disk (default setup), and another disk contains my file archive of music and such.

Now I want to setup two raid arrays, one consisting of two disks that holds the system and one raid consisting of two disks that holds the data archive.

It would also be good if the file archive disk could be expandable in an easy way later on while still being fail tolerant.

... all this without losing any data or needing to reinstall everything.

Hope someone can help me with this.
