Formatting of text in ticket system

Project Description:
Currently having some issues with the formatting of text when users submit tickets to the ticket system. The system we use is based on the open source osticket. It has had a number of customizations but the underlying code is still osticket. We just introduced a fix to allow special characters. However, now everything is coming through and makes the ticket details looks very unreadable (see attached screenshot).

For example, when users reply to a ticket via email and there signature is at the bottom, it includes it directly after the response making it hard to read. Also, prior messages "From: Help Desk > Date: Fri, 25 Jan 2013 To: User > Subject: re: email>>" are included making it hard to read. If we have a way to read the signature (if it exists) and remove it before saving to the database then it would be easier to read the ticket. Also, if we can strip out the "From: Help Desk > Date...., etc" or possibly add HTML formatting then it could make it more readable.

Prefer someone who either has experience with osticket or similiar system in PHP.
