I need a lawyer to draw up a agreement that I can ask my client and subcontractor to sign to ensure they cannot do business with each other directly and all business between them has to be coordinated by me. All parties are based in Canada, so it must follow Canadian law.

Without agreements with the client and subcontractor you have no remedy. Only the party to an agreement has a remedy. I can write the right combination of agreements for you under the relevant state or province law. Canadian federal law cannot be applied directly to agreements of this type. less
