Design a Logo for a Microbrewery (Beer)

We are embarking on a new business venture and require a really catchy logo for our Microbrewery. The official name of the company is: "Tokio Brewing Company". We are located in Okinawa, Japan and were officially Established in 2014 (Est. 2014) For our company, we are focusing in on the ideas of the fusion of Art and Science in Beer making. The company logo should look extremely professional, font selection is crucial and should not be bland. I'm providing some logo links showing what we like in concept(s):
You'll notice in our logos for Tokio, we use a "Flask" in front of the logo: http://www.tokiolabs.com/ This could be one possible key image to work out the science side of our business. We don't use wood barrels, and it would seem that too many people are using "barley/wheat" and "hops" in their logos, as tempting as it may be. All in all, we definitely like the idea of having detail but are not big on the "Super Modern" overly clean look.
That being said, I would rather focus on a "cool" look than something too old world. Don't think old world Germany, that's the wrong direction. For example, these guys are a little gritty, but they stick with it across their look and their labels:
So, bland is boring... old school is a little out... ultra modern doesn't work for us either...
