Interior Design / Architect - 4 rooms - cottage house in the farmlands

I require an interior designer/architect to review the video (attached) of a dilapidated cottage in Oatlands Tasmania that requires a fresh look.
The house is an old sandstone house in the farmlands of Oatlands, the final design should compliment and be compliant with the original design of the building. Inspiration can be carried from French cottage interior design for all rooms.
Following the video, the ambition is for:
First room shown: Bedroom with view, needs to be very comfortable and liveable, floor/ceiling/lighting and entire room to be changed.
Bed has been selected for this room, see image:
To change and be stable/consume less space (possibly a metal frame for rigidity?)
Second room shown (trophy room): Bathroom, should include shower, sink, toilet, and if possible a bath.
To be a comfortable living space focus on the fireplace and creating warmth but space for numerous people - my parents hold events and meetings with 6-12+ people. A small kitchenette in this room (for a fridge, dishwasher, bench, etc could be a good idea if possible to fit in.
Minimal changes; updating of the room and detailing.
Ideally all rooms can follow the theme of which you choose and must be elegantly done.
The focus is on durability (being a farmland property) & low cost for materials followed by design/beauty.
Materials or concepts should be available and source able to Oatlands Tasmania, ideally a builder/designer would be required here to complete the activities/rooms
The selected designer for this project must be open to 3 revisions (detailed in milestones) and the more design concepts you capture from me to begin with, the better.

The remodel of these rooms is ideally to create more space of use for my parents, current appliances and to provide more practicality and comfort to their lives, they work in the racehorse industry and herding dogs/trials.
