Help optimise performance for Drupal Commerce site using Varnish, APC, memcache and/or any other tools

I am developing a website on Drupal 7 using the commerce framework which adds additional complexities in terms of how it deals with anonymous users and orders for the shopping cart. This reduces what can be done in most Drupal sites. There are lots of discussions about DrupalCommerce,Caching and performance but see an example here: [url removed, login to view]

I am looking for a Drupal expert with experience optimising websites with complex caching needs. I am running this site on a linux VPS machine so I have

some freedom on what can be done.

The solution would need to involve server side with Drupal modules implementation and you would also need to implement the solutions. For example, configure memcache to ensure if has enough memory. The success of the job will be measured using performance monitoring modules from Drupal.

There are lots of ways to do this so please include an statement of your approach on your application and explain how you would manage the combination of needed a faster site with the management of cookies for anonymous visitors processing commerce related requests.
