Magento based ecommerce store design/coding

I have a physical store location on the island of St. Thomas. I’m looking to design a website that tailors to a specific type of clientele (tourists visiting the island). Please do not reply to this posting unless you are capable of completing the complete project and have experience with the magento shopping cart system. This is our second attempt, if you do not know magento to its bone please disregard this project. I'm looking to create a shopping environment that specifically targets tourists that are either traveling via cruise ship or arrives by plane and resides in one of the islands hotels. At this present time the store must be able to carry Liquor (see other wine/liquor sites… we must be able to include information as to the size and alcohol content/proof and all related fields), Cigarettes, and cigars. This is a duty free store based in caribbean. There might be possible additions in the future so keep that in mind when creating the database for the backend. The site must be in php and use a mysql database. The shopping experience should be very specific. Since we are targeting tourists in particular there needs to be some calendar system setup in the checkout process that allows the customer to say when they are arriving and where they will be staying (hotel, boat, etc...). We do not ship outside the island, rather have the customer pick up their order or have it delivered to the hotel of their choice. Hence instead of having the standard shipping form I require a form that can accept information regarding delivery/time/date/location/room etc. We also deliver to the cruise ship passengers when they arrive to the island, specific information needs to be collected as to which ship (we have many a day visiting the island), their cabin etc. The site needs to process payments so SSL encryption is a must. I will provide the certificate to integrate into the site. We are a Caribbean company therefore the site should reflect that. The final product should be bug free and will be tested fully before accepting the project. You will need to create all banners and layouts from scratch to show off my business. Multiple themes need to be created and the ability to change them on the fly. We will provide all the extra modules that we need from magento and the SSL certificate. We will also provide all necessary text on request. We do have a logo, you'll need to keep in mind its color scheme, yet work around the scheme of caribbean Please ask questions if you feel you are capable of designing and implementing this site. All work must be done on your own test environment on an apache server. Once project is tested I will move this to my own server for hosting. We have limited time for this project, please keep that in mind.
