I want to automate various documents such as a Service Request Ticket that customers sign when work is performed.

Senerio: A customers request gets logged by dispatcher on CRM. The request gets sent to Field Technician for processing. The form/ Service Request Ticket is available on Sharepoint for editing. Technician is able to edit form for selectable data fields that are in CRM or GP entries such as parts and hrs worked. Price to customer is automatically retrieved from CRM or GP. Customer signs Ticket where a workflow starts and the customer is automatically billed via CRM or GP. The transaction is automatically available in GP for accounting. Inventroy is automatically adjusted based on parts used.
There will be three Service Tickets formats that will be created due to the type of work done: Electrical, Security, Air Conditioning
Recommend workflow etc.
