VMware P to V: Debian 5 LAMP installation

I have a dedicated (root / ssh access) server at a hosting company. On the server I have Debian 5.0 OS with 33 domains on it (being managed by Virtualmin). About half of the domains are activate. It's all very basic.
Kernel and CPU Linux 2.6.26-2-amd64 on x86_64
Apache version 2.2.9

Dovecot IMAP/POP3 Server Version [url removed, login to view]
ConfigServer Security & Firewall - csf [url removed, login to view]
Some other tools that come along with Virtualmin.
Local disk space [url removed, login to view] GB total, [url removed, login to view] GB used (including files/images/email boxes).
As I can now rent a much faster server for the same cost as the old one, I would like to move to a new server and, at the same time, go P to V.
The project will be completed once the domains are all online/working on the new server. It will be tested with individual domains gradually pointing to the 'new' server.
Since Debian is not officially supported by the vCenter Converter, and some issues can be expected using it (example: [url removed, login to view] ) I'd like to outsource the P to V action to somebody who's familiar with this.
