Asterisk Design Recommendations

I would like to replace our current phone system with Asterisk. However, I have a small but growing call center to support. Can you recommend a basic design?

Requirements: Excellent call quality, Reliability, 24/7 operation, Redundancy (failover system, and disaster recovery site), Call Recording, Advanced Call queues, freepbx configuration, multi-location queue and extension awareness, sip trunks, etc.

We currently have 60 inbound agents in 3 countries. We could easily have 200+ agents in a year from now. I was thinking of using opensips in front of 2-3 asterisk servers with a nfs mount for shared disk for recorded calls. Can dundi sync configs between systems easily? How do I have agents log into the same queues on multiple asterisk servers, or do I just stripe the agents across the systems? Do I need to use vicidial? Can you work with that? Does it have a better UI available? Can I put this on amazon ec2 at all? What are the problems with putting it on amazon?

I am mostly looking for a recommended design. Can you recommend something that will work for us? Of course if we go forward with the design, then we'll need help building it.
