Hi Mate, I propose you to use an ATMEGA328 as the core of the controller. An A4988 will act as the motor driver. Regarding the pedal, I propose to equip it with a potentiometer that will be acquired by an analog pin of the MCU. In a first step, a mockup may be buil with an Arduino UNO and an A4988-based module.
