Admin assistant - voice chat, learning, taking direction

I'm a self-employed entrepreneur. I have multiple projects and businesses running. Some of my work has me working with my hands. I'd like to hire a virtual assistant to be on a voice call with me while I do some of this hands-on work.
Some of the work you'll be doing:
Organizing my thoughts and plans while we speak on the phone
Handling call transcripts from our calls and other meetings of mine - processing them into notes, task lists etc
Learning how my businesses work so I can give you other tasks to do
Helping me and the businesses stay on track, on target and productive
