Opencart Wesbite Expert for Optimisation and Speed up

I have a large open cart website which has around 11,000 products which I need optimizing as its running very slow. I have read on alot of forums that open cart can be slow when it as a lot of products but there are ways to optimize it to make it quicker. These optimizations are mainly done to the database, image sizes etc. The website currently takes around 18 - 20 seconds to load a page which is totally unacceptable. I require to get this down to atleast 3 seconds per page MAX.

I have moved the site to a brand new server which is more than capable of handling the site and more, the old server it was on was good but due to it having a lot of other sites on was abit slow, but the site still loaded in around 5-6 seconds. I've been told that the DB is the main issue and queries are running away with themselves giving errors such as : PHP Notice: Error: MySQL server has gone away.

Your task will be to optimise the site and database to get loading times under 3 seconds per page MAX on all pages of the site, homepage and inner product pages.

You should be a Open Cart expert and be able to fix this issue today as its very urgent.

I've had other people try but they were not open cart / server experts so they failed. I will pay 100% when complete as i've been stung in the poast with part payments and got nothing. This will be an easy fix for a opencart expert.
