Magento Admin Ordering customization process + add delivery address fields per order

Already existing magento store www.jewellery-rental.com. The store is created for rental jewels for the show-biz(films productions and theatres) with a rental period to select by user. The store has only ordering process and no transaction or payment. The projects to implement are 2 : 1) the admin owner want to create orders from manage product screen selecting products and then assigning the rental period and quantity . 2) once user has finished to enter items in the rent cart , for each order, we need to implement the delivery address fields and project title field in a form. This is because the order can have different shipping destination and different project name.
