Hi there! The answers to your questions are easy. Since you're going to be using KDP, you don't have that many options, that is if you don't want to rack up the cost and step outside their standards. The only standard portrait size that they offer is 8.25 x 6 but you won't be eligible for "Expanded Distribution". I suggest you go with a square page size of 8.5 x 8.5. That's one of their standard sizes and is eligible for "Expanded Distribution" as well. Paper, you can only have white smooth paper, you have no option for glossy. You can have a glossy cover but that's it. The book/layout has to be designed in Adobe InDesign, you can't create a book in Photoshop (well you can but it will take 20 times longer to create and won't look as good).
