Hi. The problem seems like there issue is with SPI clock frequency. Arduino mega SPI is running at 8MHz (16Mhz crystal / 2). If ESP32 is running at different frequency which is incompatible with the external ADC chip, this kind problem can occur. I can help if you give me more details such as ADC chip, which SPI are used.
